Here’s a story that you will struggle to believe, Shelanous started as a pop-up restaurant in a Caulfield synagouge back in July 2023, in those days Rony and the team would set up and pack down Shelanous every-single-night. If you have ever been to our restaurant you can only imagine how much of an undertaking that was. 

Rony had such a strong belief in the project and after much deserved success, Shelanous, Chef Rony Parienty’s first restaurant was born. 

THE SHELANOUS CONCEPT

A world first, Shelanous is the first kosher multisensory fine-dining restaurant, an homage to the rich culture of our founders and a unique take on the seasonal, Australian cuisine served within our four walls. 

With a deep-seated passion for hospitality and drawing from diverse backgrounds in the industry, we take you on an unforgettable journey characterised by warm service and exceptional cuisine, paired with thoughtfully selected beverages and an ambiance that engages all five senses.

Meet Fabi, Jean-Louis and Rony. They are your resident experience creators, the captains of the ship, your leaders on a sensory expedition unlike any other.

Rooted in Israeli culture and guided by the principles and certification of kosher Australia, Shelanous is further enriched by the unique cultural backgrounds and life experiences of each member of our team.

With a mutual passion for hosting, the team contributes their expertise to craft an experience like no other, exceeding expectations throughout every element of the Shelanous journey.

RONY PARIENTY

Chef Rony Parienty is the Head Chef and visionary behind Shelanous, after working in some of the best restaurants in Melbourne, Rony now blends his fine dining expertise and commitment to kosher, halal, vegetarian, and vegan dining, ensuring a diverse culinary experience for all.

FABIEN MOALIC

Fabi was drawn to hospitality because he is passionate about people, connection and food. Starting out as a chef and waiter, he quickly gained acclaim among the French dining scene, working among the nation’s most influential professionals, before finding his niche in wines and beverages.

JEAN-LOUIS

Raised in Paris, Jean-Louis earned his hospitality degree and has since accumulated over 18 years of industry experience, working with distinguished global brands including Sofitel, M Gallery. He is dedicated to going above and beyond to create those special "sparkle moments" at Shelanous.
